¾ cup vegetable oil 1 ½ cups sugar 2 cups grated zucchini 2 teaspoons vanilla 3 cups flour 1 ½ teaspoons cinnamon 1 teaspoon baking powder 1 cup chopped walnuts 1. Preheat oven to 325 degrees and generously spray a 9x5 inch loaf pan with cooking spray. In a large mixing bowl, beat eggs. Add oil, sugar, zucchini, and vanilla and beat to combine. In a medium bowl, whisk together flour, cinnamon, and baking powder until well-combined; beat into egg mixture just until incorporated. Stir in walnuts. 2. Transfer batter to prepared pan and bake until a toothpick inserted in center comes out clean, about 60 minutes. Cool in pan on a wire rack for 10 minutes before turning out to cool completely.
