Sausage Tortellini Soup

​12 ounces Italian turkey sausage links, casings removed
1 medium onion, chopped
6 cloves garlic, minced
2 cans (14 ounces each) chicken broth
1 ¾ cups water
1 can (15 ounces) diced tomatoes, undrained
1 package (9 ounces) refrigerated cheese tortellini
1 package (6 ounces) fresh baby spinach, chopped
1 teaspoon basil
pepper
red pepper flakes
shredded parmesan cheese
 
1.  Crumble sausage into a large saucepan or Dutch oven; add onion.  Cook and stir over medium into sausage is no longer pink.  Add garlic and cook 1 minute longer.  Stir in broth, water, and tomatoes and bring to a boil.
 
2.  Add tortellini; return to a boil.  Reduce to a simmer and cook for 5-7 minutes or until almost tender.  Stir in spinach and basil and season with pepper and red pepper flakes.  Cook until tortellini is tender and spinach is wilted.  Serve with cheese.
