12 ounces Italian turkey sausage links, casings removed
1 medium onion, chopped 6 cloves garlic, minced 2 cans (14 ounces each) chicken broth 1 ¾ cups water 1 can (15 ounces) diced tomatoes, undrained 1 package (9 ounces) refrigerated cheese tortellini 1 package (6 ounces) fresh baby spinach, chopped 1 teaspoon basil pepper red pepper flakes shredded parmesan cheese 1. Crumble sausage into a large saucepan or Dutch oven; add onion. Cook and stir over medium into sausage is no longer pink. Add garlic and cook 1 minute longer. Stir in broth, water, and tomatoes and bring to a boil. 2. Add tortellini; return to a boil. Reduce to a simmer and cook for 5-7 minutes or until almost tender. Stir in spinach and basil and season with pepper and red pepper flakes. Cook until tortellini is tender and spinach is wilted. Serve with cheese. Added June 2020
